These filo parcels are the perfect festive weeknight meal, featuring a delicious honey, THIS™ Isn't Bacon and Brussels sprout filling and drizzled with a rich balsamic pomegranate glaze. Accompanied by sides of roasted asparagus, a creamy sprout and THIS™ Isn't Bacon gratin, and herby roasted potatoes.

Due to the war in Ukraine, it has been necessary to substitute sunflower oil with rapeseed oil in some products without a label change. The FSA have advised that allergic reactions to rapeseed oil are rare.

Water for the Sauce
a) Preheat your oven to 220°C/200°C fan/gas mark 7.
b) Thinly slice the Brussels sprouts.
c) Slice the THIS™ Isn't Bacon widthways into 1cm pieces.
d) Peel and grate the garlic (or use a garlic press).
e) Roughly chop the parsley (stalks and all).
a) Heat a drizzle of oil in a large frying pan on medium-high heat.
b) Once hot, add the sliced Brussels sprouts, garlic and the THIS™ Isn't Bacon pieces. Cook for 5-6 mins, stirring occasionally. IMPORTANT: Ensure it's piping hot throughout.
c) Once cooked, remove from the heat and stir through half the honey and three quarters of the parsely. TIP: If your honey has hardened, put the sachet in a bowl of hot water for 1 min to loosen.
a) Halve a filo pastry sheet to make squares, then cut both squares into quarters. Repeat this process until you have 8 small squares per person.
b) Lay a filo square on a board, brush with a little oil, then lay another square on top at a slight angle. Repeat this process to make 4 parcel bases per person, with each base being made of 2 pastry squares.
a) Divide the sprout and THIS™ Isn't Bacon filling between the pastry squares. Gather up the edges of each one and scrunch together to make your parcels.
b) Place the parcels onto a baking tray and drizzle with oil. Roast on the middle shelf of the oven until the parcels are golden brown, 8-10 mins.
a) Meanwhile, return the sprout frying pan (no need to clean) to medium-high heat and add a drizzle of oil.
b) When hot, add the balsamic glaze, pomegranate molasses, the remaining honey and the water (see pantry). Lower the heat and simmer until slightly thickened, 5-7 mins.
a) Divide the THIS™ Isn't Bacon filo parcels equally between your plates.
b) Drizzle over the balsamic-pomegranate sauce and sprinkle over the remaining parsely to finish.
