Not so long ago our intrepid Head Chef headed over to Matera in the Southern Italian region of Basilicata where he struck upon black gold. In this case it wasn’t oil or even coffee, but the region’s famous black truffles. In Basilicata they use dogs to sniff out the truffles as apparently the pigs scoff them as soon as they get a whiff. After a long day of digging he whipped up this recipe for dinner with a few drops of the locally prized truffle oil. Your very own plate of dinnertime gold!
