Drain the halloumi, then cut it into slices. Fry until golden, 2-3 mins each side.
Toast the ciabatta if you wish, then spread the smashed avocado on the bases and the pesto on the lids. Lay the halloumi and rocket over the smashed avocado, then sandwich on the ciabatta lids to finish.
