Instructions

  1. Halve any thick broccoli stems lengthways.
  2. Trim the carrot, then halve lengthways (no need to peel). Slice widthways into pieces about 0.5cm thick.
  3. Peel and grate the garlic (or use a garlic press).

  1. Heat a drizzle of oil in a large frying pan on medium-high heat.
  2. Once the oil is hot, add the Tenderstem® and carrot. Stir-fry for 2-3 mins. Add a splash of water, then cover with a lid (or foil) and allow to cook until tender, 2-3 mins more. Season with salt and pepper.
  3. Remove the veg to a medium bowl and cover to keep warm. 
  4. Wipe out the pan.

  1. Heat (the now empty) frying pan on medium-high heat with a drizzle of oil.
  2. Once the pan is hot, add the beef mince. Fry until the mince has browned, 5-6 mins. Use a spoon to break it up as it cooks. IMPORTANT: Wash your hands and equipment after handling raw mince.
  3. When the mince has browned, drain and discard any excess fat. Season with salt and pepper. IMPORTANT: The mince is cooked when no longer pink in the middle.

  1. Add the garlic and fry for 1 min more.
  2. Stir in the hoisin, ketjap and water (see pantry for amount). 
  3. Simmer the sauce until slightly thickened, 2-3 mins.

  1. Add the udon noodles to the pan along with the broccoli and carrot.
  2. Toss to coat and simmer until piping hot, 1-2 mins. 
  3. Add a splash of water if the sauce is too thick.

  1. Share the noodles between your serving bowls.
  2. Enjoy!
