a) Bring a large saucepan of water to the boil with 0.25 tsp salt for the noodles.
b) Halve any thick broccoli stems lengthways.
c) When boiling, add the noodles and broccoli to the water and cook until tender, 4 mins.
d) Once cooked, drain in a sieve and run under cold water to stop the noodles sticking together.
a) Meanwhile, heat a drizzle of oil in a large frying pan on high heat.
b) When hot, add the mushrooms to the pan.
c) Season with salt and pepper and fry, stirring occasionally, until browned, 5-6 mins.
a) Meanwhile, peel and grate the garlic (or use a garlic press).
b) Lower the heat to medium-high, then add the coleslaw mix, ginger puree and garlic.
c) Fry for 1 min.
a) Add the soy sauce, Worcester sauce, hoisin sauce, tomato puree, along with the sugar, ketchup and water for the sauce (see pantry for all three amounts).
b) Stir together and bring to the boil, then reduce the heat and simmer until thickened, 2-3 mins.
a) Stir the cooked noodles and broccoli into the sauce.
b) Heat until piping hot, 1 min.
a) Share the yaki veggie noodles between your serving bowls.
b) Sprinkle over the sesame seeds.
