Quick Prep
1

a) Thinly slice the tomatoes.

b) Drain the mozzarella and squeeze out as much liquid as you can. Pat dry with kitchen paper, then thinly slice.

Ready to Roll
2

a) Halve the seeded rolls lengthways.

b) Spread the pesto evenly over the base of each roll.

c) Arrange the rocket on top of the pesto.

Time for Lunch
3

a) Top the rocket with the tomato slices.

b) Lay the mozzarella on top.

c) Sandwich shut the roll lids and tuck in. TIP: If you have any leftover ingredients, serve them on the side as a small salad if you'd like.
