Instructions

  • Boil a half-full kettle. 
  • Meanwhile, slice the pepper into strips. 
  • Pour the boiling water into a saucepan with 0.25 tsp salt on high heat.
  • Boil the rice, 10-12 mins.

  • Next, heat a drizzle of oil in a frying pan on high heat. 
  • Once hot, fry the diced chicken, pepper and peri peri seasoning, 5-6 mins. Season with salt and pepper. IMPORTANT: Wash your hands and equipment after handling raw chicken and its packaging.

  • Stir the tomato puree, chicken stock paste, water and sugar (see pantry for both) into the chicken. 
  • Bring to the boil, then lower the heat. Simmer, 3-4 mins. IMPORTANT: The chicken is cooked when no longer pink in the middle.
  • Once the rice is cooked, drain, pop back in the pan and stir in the peas. Cover, 1 min.

  • Once the sauce is ready, stir through the BBQ sauce. Season with salt and pepper. 
  • Share the rice, chicken and veg between your bowls.

  • Spoon over any sauce.
