Instructions

1

a) Boil a full kettle.

b) While it boils, trim and halve the green beans.

c) Trim and thinly slice the spring onion.

a) Pour the boiled water into a large saucepan with 0.25 tsp salt on high heat.

b) Add the rice and cook for 10-12 mins.

c) Drain in a sieve and pop back in the pan.

d) Cover with a lid and leave to the side until ready to serve.

a) Meanwhile, heat a frying pan on medium-high heat (no oil).

b) Once the pan is hot, add the beef mince, mushrooms and green beans and fry until browned, 5-6 mins. 

c) Use a spoon to break the mince up as it cooks, then drain and discard any excess fat. Season with salt and pepper.

d) IMPORTANT: Wash your hands and equipment after handling raw mince. The mince is cooked when no longer pink in the middle.

a) While it fries, cut the lime into quarters. Peel and grate the garlic (or use a garlic press).

b) Once the mince has browned, add the garlic, Thai style spice blend and red thai paste. Stir-fry for 1 min. 

c0 Stir in the water and simmer until slightly thickened, 1-2 mins.

a) Once the rice is cooked, and drained, stir it into the mince. 

b) Add the soy sauce and a squeeze of lime juice.

c) Taste and season with salt and pepper if needed.

a) poon the fried rice into your serving bowls.

b) Sprinkle over the spring onion.

c) Serve any remaining lime wedges on the side for squeezing over.
