Preheat your oven to 220°C/200°C fan/gas mark 7. Chop the potatoes lengthways into 1cm slices, then chop into 1cm wide chips (no need to peel).
Pop the chips onto a large baking tray. Drizzle with oil, season with salt and pepper, then toss to coat. Spread out in a single layer. TIP: Use two baking trays if necessary.
When the oven is hot, bake on the top shelf until golden, 25-30 mins. Turn halfway through.
Meanwhile, quarter the pear lengthways (no need to peel). Remove the core, then half them again lengthways.
Lay the pear slices onto another baking tray, drizzle with oil and the honey (see pantry for amount) then roast on the middle shelf until tender, 20-25 mins. Turn halfway through.
Meanwhile, roll the sausage meat into even-sized balls and shape into 1cm thick burgers, 1 per person. Pop them onto a plate. IMPORTANT: Wash your hands and equipment after handling raw meat.
TIP: Wet your hands slightly before shaping the sausage meat, as this will help prevent it sticking to your hands.
Once the chips have been cooking for about 10 mins, heat a drizzle of oil in a large frying pan on medium-high heat.
Once the oil is hot, add the burgers and fry until browned and cooked through,10-12 mins total. Carefully turn them every 2 mins and lower the heat if needed.
Once cooked, transfer to a clean plate lined with kitchen paper. IMPORTANT: The burgers are cooked when no longer pink in the middle.
A few minutes before everything is ready, halve the burger buns.
Pop them into the oven to warm through, 2-3 mins.
Once warm, transfer the buns to your plates. Lay the pear slices onto the bun bases. Top with the burgers, then the blue cheese and finally some rocket.
Spread the mayo (see pantry for amount) onto the bun lid and sandwich together. Serve the chips alongside.
