Bring a large saucepan of water to the boil with 0.5 tsp salt for the rigatoni.
When boiling, add the rigatoni to the water and bring back to the boil. Cook until tender, 12 mins.
Once cooked, drain in a colander and pop back in the pan. Drizzle with oil and stir through to stop it sticking together.
Meanwhile, heat a frying pan on medium-high heat (no oil).
Once the pan is hot, add the beef mince. Fry until the mince has browned, 5-6 mins. Use a spoon to break it up as it cooks. IMPORTANT: Wash your hands and equipment after handling raw mince.
When the mince has browned, drain and discard any excess fat. Season with salt and pepper. IMPORTANT: The mince is cooked when no longer pink in the middle.
Meanwhile, peel and grate the garlic (or use a garlic press).
Once the beef has browned, add the garlic and fry until fragrant, 30 secs.
Stir in the mixed herbs, passata, red wine jus paste, sugar and water for the sauce (see pantry for both amounts).
Bring to the boil then reduce the heat and simmer until thickened, 5-6 mins.
Meanwhile, preheat the grill to high. Drain and tear the mozzarella.
When the pasta sauce has thickened, stir the cooked rigatoni and butter (see pantry for amount) into the sauce until the butter has melted.
Taste and season with salt and pepper. Add a splash of water if you feel it needs it.
Transfer the pasta to an appropriately sized ovenproof dish. Lay the mozzarella pieces on top of the pasta.
Grill until the mozzarella is golden and bubbling.
