Golden fried chicken coated in sticky, sweet chilli sauce makes for an ideal sarnie filling. Slices of tomato, a layer of mayo and a handful of rocket ensure this seeded roll tastes as fresh as it does delicious.

Fry The Chicken

a) Heat a drizzle of oil in a large frying pan on medium-high heat.

b) Once the oil is hot, add the chicken and season with salt and pepper.

c) Fry until golden brown on the outside and cooked through, 8-10 mins. IMPORTANT: Wash your hands and equipment after handling raw chicken and its packaging. It's cooked when no longer pink in the middle.

d) Once the chicken is cooked, pop it in a medium bowl.

e) Add the sweet chilli sauce, stir to coat, then leave to cool for 5-10 mins.

On a Roll

a) Meanwhile, thinly slice the tomatoes.

b) Slice the seeded rolls in half lengthways.

c) Spread the mayo onto the bottom half of each roll.

d) Lay the rocket on top.

e) Arrange the tomato slices on top of the rocket.

a) Top the tomato with the sweet chilli chicken pieces.

b) Sandwich on the top half of each roll.

c) Lunch is ready.
