This ciabatta is delicious served hot or cold. Spicy yet sweet harissa, layers of rich Serrano ham, Cheddar cheese and rocket make for a yummy and super speedy lunch.

a) If you don't have a toaster, preheat your grill to high.
b) Grate the Cheddar cheese.
c) In a small bowl, mix the harissa paste (add less if you'd prefer things milder) with the mayo (see pantry for amount). TIP: It's just as delicious without the mayo if you like a bit of pep!
a) Halve the ciabatta.
b) Toast in your toaster until golden. Alternatively, grill on the top shelf until golden, 2-3 mins. TIP: You can leave the ciabatta untoasted if you'd prefer a softer sandwich.
a) Spread the harissa mayo over the lid and base of each ciabatta - use as much or as little as you'd like.
b) Top each base with the grated Cheddar.
c) Layer each base with 2 Serrano ham slices and some rocket, then sandwich shut with the bun lid.
