Drain the halloumi, cut into 2cm chunks, then fry on medium-high heat until golden, 6-7 mins.
Meanwhile, slice the cucumber into rounds. Peel the avocado and slice into chunks. Add the baby leaf mix, cucumber and avocado to a bowl. Top with the fried halloumi.
Drizzle over the pesto. Dollop over the houmous. Scatter over the pumpkin seeds to finish.
