Roasted Pepper Mini Ciabatta Pizzas

with Parmigiano Reggiano Dressed Rocket Salad | Serves 2

Preheat your oven to 220°C/200°C fan/gas mark 7. Halve the ciabatta. Grate the cheese. Slice the pepper into thin strips.

Top each ciabatta half with the marinara sauce, sliced pepper and cheese.

Bake on the top shelf of the oven, 6-7 mins. Serve alongside the rocket, dressed in olive oil and topped with Parmigiano Reggiano.
