Instructions

  • Boil a half-full kettle.
  • Pour it into a saucepan with 0.25 tsp salt on high heat.
  • Boil the rice, 10-12 mins.
  • Once cooked, drain, pop back in the pan and cover.

  • Meanwhile, heat a drizzle of oil in a large frying pan on medium-high heat. Once the oil is hot, add the diced chicken to the pan and season with salt and pepper. Cook until browned all over, 5-6 mins. Turn occasionally. IMPORTANT: Wash your hands and equipment after handling raw chicken and its packaging.
  • While the chicken fries, grate the cheese.
  • Drain and rinse the beans in a sieve.
  • Open the remaining sachets.

  • Stir in the beans, tomato puree, chicken stock paste and water for the sauce (see pantry for amount). Bring to the boil, then lower the heat so the sauce simmers gently. Cook until the chicken is cooked through, 3-4 mins. IMPORTANT: The chicken is cooked when no longer pink in the middle.
  • When the sauce has 1 min of simmer time left, stir in the smoky base paste, BBQ sauce and butter (see pantry for amount).
  • Taste and season with salt and pepper if needed.
  • Add a splash of water if it's a little too thick.

  • Share the rice between your serving bowls.
  • Spoon over the smoky chicken and beans.
  • Sprinkle on the cheese.
