Instructions

a) Drain the halloumi, pat dry with kitchen paper and slice into 1cm batons.

b) Thinly slice the chilli.

c) Zest and cut the lime into wedges.

a) Heat a large frying pan on medium-high with a drizzle of oil. Fry the halloumi until golden, turning frequently, 4-5 mins.

b) Remove the pan from the heat and add the mango chutney, half the sliced chillies, the lime zest and half the toasted flaked almonds. Mix until combined.

a) Plate up your halloumi with a sprinkle of the remaining chilli and toasted flaked almonds
