a) Bring a large saucepan of water to the boil with 0.5 tsp salt for the penne.
b) When boiling, add the penne to the water and bring back to the boil. Cook until tender, 12 mins.
c) Once cooked, drain in a colander and pop back in the pan. Drizzle with oil and stir through to stop it sticking together.
a) Meanwhile, halve, peel and thinly slice the onion.
b) Heat a drizzle of oil in a large frying pan on medium-high heat.
c) Once the pan is hot, add the beef mince and onion. Fry until the mince has browned, 5-6 mins. Use a spoon to break it up as it cooks. IMPORTANT: Wash your hands and equipment after handling raw mince.
d) When the mince has browned, drain and discard any excess fat. Season with salt and pepper. IMPORTANT: The mince is cooked when no longer pink in the middle.
a) While the beef fries, grate the cheese.
b) Peel and grate the garlic (or use a garlic press).
a) Add the garlic to the pan and fry until fragrant, 1 min.
b) Stir in the passata, beef stock paste, Worcester sauce, ketchup, sugar and water for the sauce (see pantry for amounts).
c) Bring to a boil, then reduce the heat and simmer until thickened, 3-4 mins.
a) Stir the butter (see pantry for amount) into the sauce until melted.
b) Once the pasta is cooked, stir the cooked pasta into the sauce
a) Share the pasta between your serving bowls. Sprinkle over the cheese. Drizzle over the burger sauce.
b) Serve the rocket alongside with a drizzle of balsamic glaze
