Method
  1. Slice leek, dice potato, slice carrots, chop spring onion, and mince garlic.
  2. In a bowl, mix lamb mince, panko breadcrumbs, half the minced garlic, and ¼ tsp dried thyme. Form into small meatballs.
  3. Cook bacon lardons in a pot until crispy. Remove and set aside. In the same pot, brown the lamb meatballs on all sides, then remove.
  4. Sauté leek, remaining garlic, and carrots in the pot for 3-4 minutes.
  5. Sprinkle flour over the vegetables and stir to coat.
  6. Return bacon and meatballs to the pot. Add potato, red wine stock paste, and 2 cups of water.
  7. Bring to a boil, reduce heat, cover, and simmer for 45 minutes to 1 hour, until vegetables are tender.
