What is Red Leicester cheese?
Originating in Leicestershire, England, Red Leicester is a hard cheese made from cow’s milk. It is deep orange in colour, with a creamy and slightly nutty taste.
Why is Red Leicester called Red Leicester?
Red Leicester cheese was originally made in Leicester, England, in the 1700s. With surplus milk from stilton production, Red Leicester had carrot or beetroot juice added to give it its unique and appealing colour. It was originally called Leicestershire cheese but over the years came to be known as Red Leicester.
What makes Red Leicester red?
The deep orange colouring of Red Leicester cheese in this day and age is due to the addition of annatto, a food colourant derived from the seeds of the achiote tree, which is added during the making of the cheese.
How strong is Red Leicester?
Red Leicester builds up a more robust and stronger taste as it ages. Any Red Leicester aged from six months to a year would be milder, but any aged over around 14 months would be considered a strong cheese.
